- 2 cups cooked chicken breast, shredded
- 1 cup canned black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 cup shredded cheddar cheese
- 1/2 cup diced red bell pepper
- 1/2 cup diced green onions
- 1/4 cup chopped cilantro
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 12 egg roll wrappers
- Cooking spray
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a large bowl, combine chicken, black beans, corn, cheddar cheese, red bell pepper, green onions, cilantro, chili powder, cumin, garlic powder, salt, and pepper.
- Place an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2-3 tablespoons of the mixture onto the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the edge with a bit of water.
- Repeat with the remaining wrappers and filling.
- Spray the egg rolls lightly with cooking spray.
- Place in the air fryer basket in a single layer. Cook for 10-12 minutes, flipping halfway through, until golden and crispy.
- Serve warm with your favorite dipping sauce.

- You can use rotisserie chicken for a quick prep.
