Description

Asian Chicken Salad is a crisp, colorful, and refreshing salad made with shredded chicken, crunchy vegetables, and a tangy sesame-ginger dressing. It’s perfect for a light lunch or a flavorful dinner.


Ingredients

  • 2 cups cooked, shredded chicken
  • 3 cups shredded Napa cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced almonds
  • 1/4 cup crispy wonton strips or chow mein noodles (optional)
  • 2 tbsp toasted sesame seeds (optional)
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp grated fresh ginger
  • 1 garlic clove, minced
  • 1/4 cup olive oil


Instructions

  1. In a large bowl, combine shredded chicken, Napa cabbage, red cabbage, carrots, bell pepper, green onions, cilantro, almonds, and sesame seeds if using.
  2. In a small bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and olive oil until well combined.
  3. Pour the dressing over the salad and toss until everything is evenly coated.
  4. Top with crispy wonton strips or chow mein noodles just before serving for added crunch.
  5. Serve immediately or chill for 15–20 minutes to enhance flavor.
