Ingredients
- 2 cups cooked, shredded chicken
- 3 cups shredded Napa cabbage
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced almonds
- 1/4 cup crispy wonton strips or chow mein noodles (optional)
- 2 tbsp toasted sesame seeds (optional)
- 1/4 cup rice vinegar
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp honey or maple syrup
- 1 tbsp grated fresh ginger
- 1 garlic clove, minced
- 1/4 cup olive oil
Instructions
- In a large bowl, combine shredded chicken, Napa cabbage, red cabbage, carrots, bell pepper, green onions, cilantro, almonds, and sesame seeds if using.
- In a small bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and olive oil until well combined.
- Pour the dressing over the salad and toss until everything is evenly coated.
- Top with crispy wonton strips or chow mein noodles just before serving for added crunch.
- Serve immediately or chill for 15–20 minutes to enhance flavor.
