Ingredients

  • 3 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 2 green onions, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon toasted sesame seeds
  • 1/4 cup rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 2 tablespoons neutral oil (like canola or vegetable)


Instructions

  1. In a large bowl, combine green cabbage, red cabbage, carrots, red bell pepper, green onions, and cilantro.
  2. In a small bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and neutral oil until well combined.
  3. Pour the dressing over the slaw and toss to evenly coat.
  4. Sprinkle with toasted sesame seeds just before serving.
  5. Let sit for 10–15 minutes to allow flavors to meld, or chill for later.

Notes

  • For a spicier version, add a dash of sriracha or chili flakes to the dressing.
