- 1.5 lbs (700g) boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 3 garlic cloves, minced
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, salt, and pepper.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably 4-6 hours.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken onto the skewers evenly.
- Preheat a grill or grill pan over medium-high heat.
- Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked and nicely charred.
- Serve hot with pita bread, tzatziki, and your favorite fresh vegetables.
