- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/4 cup olive oil (for frying)
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- Fresh basil or parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet or baking dish with foil and lightly grease it.
- Pound chicken breasts to even thickness. Season with salt and pepper.
- Set up a breading station: place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with Parmesan, garlic powder, and oregano in a third.
- Dredge each chicken breast in flour, then egg, then breadcrumb mixture, pressing to adhere.
- Heat olive oil in a large skillet over medium heat. Fry chicken breasts for 3–4 minutes per side until golden brown. Transfer to prepared baking dish.
- Spoon marinara sauce over each chicken breast and sprinkle evenly with mozzarella cheese.
- Bake for 15–20 minutes or until chicken is cooked through (165°F/74°C) and cheese is melted and bubbly.
- Garnish with chopped basil or parsley and serve hot over pasta or with a side salad.
