Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 red bell pepper, diced
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the black beans, corn, red bell pepper, cucumber, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, apple cider vinegar, cumin, chili powder, salt, and pepper until well combined.
- Pour the dressing over the salad ingredients and toss to coat evenly.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
