Buttery, soft, and sweet Butter Pecan Cookies that melt in your mouth with every bite. These cookies are made with roasted pecans and a rich butter flavor, perfect for a holiday treat or a special dessert.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chopped pecans, toasted
- 1/2 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Fold in the toasted, chopped pecans.
- Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still be soft.
- Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust with powdered sugar and serve.
Notes
- For an extra pecan flavor, you can roast the pecans in the oven at 350°F for 8-10 minutes before chopping and adding them to the dough.
- If you prefer a slightly chewier cookie, reduce the baking time by 1-2 minutes.
- Store cookies in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.
