Description

Buttery, soft, and sweet Butter Pecan Cookies that melt in your mouth with every bite. These cookies are made with roasted pecans and a rich butter flavor, perfect for a holiday treat or a special dessert.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chopped pecans, toasted
  • 1/2 cup powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in the toasted, chopped pecans.
  7. Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still be soft.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, dust with powdered sugar and serve.

Notes

  • For an extra pecan flavor, you can roast the pecans in the oven at 350°F for 8-10 minutes before chopping and adding them to the dough.
