Description

Café de Paris Butter is a rich, compound butter packed with herbs, spices, and umami ingredients, traditionally served melting over grilled steak to add complex and luxurious flavor.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 small shallot, finely minced
  • 1 tbsp capers, finely chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp curry powder
  • 1/2 tsp paprika
  • 1/2 tsp anchovy paste (optional)
  • 1 tbsp chopped fresh parsley
  • 1 tsp chopped fresh tarragon
  • 1/2 tsp garlic powder
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine all ingredients with the softened butter and mix thoroughly until fully incorporated.
  2. Place the butter mixture on a sheet of plastic wrap or parchment paper and shape into a log.
  3. Wrap tightly and refrigerate for at least 1 hour, or until firm.
  4. Slice into discs and place on top of hot, cooked steak just before serving to melt over the meat.

Notes

  • Can be frozen for up to 3 months; slice and use as needed.
  • Also excellent over grilled chicken, fish, or vegetables.
  • Let butter come to room temperature for easier mixing.
