- 2 boneless, skinless chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon lemon juice (optional)
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced chicken breasts and season with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
- Cook the chicken for about 5-7 minutes, until browned and cooked through.
- Add the sliced bell peppers to the skillet and cook for another 5 minutes, stirring occasionally, until the peppers are tender-crisp.
- Drizzle with lemon juice if using and stir to combine.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- Adjust Cajun seasoning to control the spice level.
- Can be served over rice, quinoa, or in wraps.
