Description

Fun and festive carrot-shaped vegan Easter brownies made with rich cocoa and topped with orange-colored frosting and green tops. Perfect for a holiday treat that’s both delicious and plant-based.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 1/4 cup plant-based milk (almond, soy, or oat)
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips (optional)
  • 1/2 cup vegan butter (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)
  • 23 tbsp plant-based milk (for frosting)
  • Orange food coloring
  • Green licorice strings or green icing (for carrot tops)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. Add applesauce, oil, plant-based milk, and vanilla extract to the dry ingredients and mix until combined. Fold in chocolate chips if using.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let brownies cool completely in the pan before removing.
  7. While brownies are cooling, prepare the frosting by beating vegan butter until smooth. Gradually add powdered sugar, plant-based milk, and a few drops of orange food coloring until desired consistency and color are achieved.
  8. Once cooled, cut brownies into triangles to resemble carrots.
  9. Frost the triangle brownies with orange frosting and decorate the top with green licorice strings or green icing to resemble carrot tops.

Notes

  • Use a piping bag for more precise frosting application.
  • Brownies can be made a day in advance and stored in an airtight container.
  • Optional: add chopped nuts for texture.
