- 4 cups celery, thinly sliced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup lemon juice (about 2 lemons)
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup toasted walnuts or almonds (optional)
Instructions
- Wash and thinly slice the celery and red onion.
- In a large bowl, combine the celery, red onion, and chopped parsley.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the celery mixture and toss to coat evenly.
- Top with Parmesan cheese and nuts if using.
- Chill for 15–30 minutes before serving for best flavor.
Notes
- For extra crunch, add thinly sliced apples or fennel.
- Use fresh lemon juice for a brighter flavor.
