- 6 cups Rice Krispies cereal
- 1 (10 oz) bag mini marshmallows
- 3 tbsp unsalted butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped topping or whipped cream
Instructions
- In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted and smooth.
- Remove from heat and quickly stir in Rice Krispies cereal until well coated.
- Divide the mixture in half. Press one half evenly into a greased or parchment-lined 9×13-inch pan. Let cool slightly.
- In a medium bowl, beat cream cheese until smooth. Add powdered sugar and vanilla; mix until combined. Fold in whipped topping.
- Spread cheesecake mixture evenly over the first Rice Krispies layer.
- Press the remaining Rice Krispies mixture gently on top of the cheesecake layer.
- Refrigerate for at least 1 hour before slicing into squares and serving.
Notes
- Spray hands with cooking spray or use parchment paper to press down Rice Krispies mixture without sticking.
- Chill thoroughly before slicing for clean layers.
