Description

Cheesecake Rice Krispies Treats are a fun twist on the classic marshmallow snack, featuring a creamy cheesecake layer sandwiched between two soft and chewy Rice Krispies treat layers. Perfect for parties, potlucks, or a sweet no-bake dessert.


Ingredients

  • 6 cups Rice Krispies cereal
  • 1 (10 oz) bag mini marshmallows
  • 3 tbsp unsalted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping or whipped cream

Instructions

  1. In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted and smooth.
  2. Remove from heat and quickly stir in Rice Krispies cereal until well coated.
  3. Divide the mixture in half. Press one half evenly into a greased or parchment-lined 9×13-inch pan. Let cool slightly.
  4. In a medium bowl, beat cream cheese until smooth. Add powdered sugar and vanilla; mix until combined. Fold in whipped topping.
  5. Spread cheesecake mixture evenly over the first Rice Krispies layer.
  6. Press the remaining Rice Krispies mixture gently on top of the cheesecake layer.
  7. Refrigerate for at least 1 hour before slicing into squares and serving.

Notes

  • Spray hands with cooking spray or use parchment paper to press down Rice Krispies mixture without sticking.
  • Chill thoroughly before slicing for clean layers.
  • Add a drizzle of melted white chocolate or berry sauce for extra flair.
