Cheesy Chicken Casserole is a comforting and hearty baked dish loaded with tender chicken, creamy sauce, and melted cheese. It’s perfect for family dinners and great for making ahead or feeding a crowd.
Ingredients
- 3 cups cooked, shredded chicken
- 2 cups cooked pasta (penne or rotini)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/2 cup crushed Ritz crackers or breadcrumbs (optional topping)
- 2 tbsp melted butter (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until smooth.
- Stir in the shredded chicken, cooked pasta, cheddar cheese, and half of the mozzarella cheese.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with remaining mozzarella cheese.
- In a small bowl, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole (if using).
- Bake for 25–30 minutes, or until the casserole is hot and bubbly and the top is golden brown.
- Let rest for 5 minutes before serving.
Notes
- Use rotisserie chicken to save time.
- Add vegetables like peas, broccoli, or mushrooms for extra nutrition.
- Can be assembled ahead and refrigerated up to 24 hours before baking.
