Ingredients

For the Chicken:

  • 1 ½ pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 tablespoons olive oil, divided
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Vegetables:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • Warm flour or corn tortillas for serving

Instructions

  1. Marinate the Chicken: In a large bowl, combine 2 tablespoons olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add chicken strips and toss to coat. Let marinate for at least 20 minutes.
  2. Cook the Chicken: Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5–7 minutes, or until browned and cooked through. Remove chicken and set aside.
  3. Cook the Vegetables: In the same skillet, add bell peppers and onion. Cook for 5–6 minutes until tender-crisp.
  4. Combine and Serve: Return chicken to the skillet, toss to combine, and cook for another 1–2 minutes until heated through. Serve hot with warm tortillas and your favorite toppings.
