Ingredients
For the Chicken:
- 1 ½ pounds boneless, skinless chicken breasts, sliced into thin strips
- 3 tablespoons olive oil, divided
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Vegetables:
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- Warm flour or corn tortillas for serving
Instructions
- Marinate the Chicken: In a large bowl, combine 2 tablespoons olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add chicken strips and toss to coat. Let marinate for at least 20 minutes.
- Cook the Chicken: Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5–7 minutes, or until browned and cooked through. Remove chicken and set aside.
- Cook the Vegetables: In the same skillet, add bell peppers and onion. Cook for 5–6 minutes until tender-crisp.
- Combine and Serve: Return chicken to the skillet, toss to combine, and cook for another 1–2 minutes until heated through. Serve hot with warm tortillas and your favorite toppings.
