Description

The Chicken Parmesan Sandwich is a hearty and satisfying sandwich featuring crispy breaded chicken, marinara sauce, and melted cheese on a toasted bun. It’s a portable version of the classic Italian-American dish.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup vegetable oil (for frying)
  • 1 cup marinara sauce
  • 4 slices mozzarella cheese
  • 4 sandwich rolls or hoagie buns
  • 2 tbsp butter (optional, for toasting buns)
  • Fresh basil leaves (optional, for garnish)


Instructions

  1. Slice chicken breasts in half horizontally to create 4 cutlets. Pound to even thickness if needed.
  2. Season chicken with salt and pepper.
  3. Set up a breading station: place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with Parmesan and Italian seasoning in a third.
  4. Dredge each chicken piece in flour, dip in egg, then coat with breadcrumb mixture.
  5. Heat oil in a skillet over medium heat. Fry chicken until golden and cooked through, about 4-5 minutes per side. Drain on paper towels.
  6. Preheat broiler or oven to 400°F (200°C). Place chicken on a baking sheet, top each piece with marinara sauce and a slice of mozzarella.
  7. Broil or bake until cheese is melted and bubbly, about 2-3 minutes.
  8. Optional: butter and toast the sandwich buns in a skillet or oven until golden.
  9. Assemble sandwiches by placing a piece of chicken on each bun and topping with basil if using. Serve hot.
