Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 cup vegetable oil (for frying)
- 1 cup marinara sauce
- 4 slices mozzarella cheese
- 4 sandwich rolls or hoagie buns
- 2 tbsp butter (optional, for toasting buns)
- Fresh basil leaves (optional, for garnish)
Instructions
- Slice chicken breasts in half horizontally to create 4 cutlets. Pound to even thickness if needed.
- Season chicken with salt and pepper.
- Set up a breading station: place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with Parmesan and Italian seasoning in a third.
- Dredge each chicken piece in flour, dip in egg, then coat with breadcrumb mixture.
- Heat oil in a skillet over medium heat. Fry chicken until golden and cooked through, about 4-5 minutes per side. Drain on paper towels.
- Preheat broiler or oven to 400°F (200°C). Place chicken on a baking sheet, top each piece with marinara sauce and a slice of mozzarella.
- Broil or bake until cheese is melted and bubbly, about 2-3 minutes.
- Optional: butter and toast the sandwich buns in a skillet or oven until golden.
- Assemble sandwiches by placing a piece of chicken on each bun and topping with basil if using. Serve hot.

- Substitute mozzarella with provolone for a different flavor.
