- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, garlic, lemon juice, thyme, paprika, salt, and black pepper.
- Place the chicken thighs in a large resealable plastic bag or shallow dish.
- Pour the marinade over the chicken and seal the bag or cover the dish. Refrigerate for at least 1 hour, preferably overnight for maximum flavor.
- Remove the chicken from the marinade and discard any excess marinade.
- Cook the chicken as desired—grill, bake, or pan-fry until the internal temperature reaches 165°F (75°C).
Notes
- This marinade is great for boneless or bone-in chicken thighs.
- For added flavor, marinate the chicken overnight to allow the flavors to fully penetrate.
- Feel free to add red pepper flakes for a spicy kick, or swap honey for maple syrup for a different sweetness.
