Description

Chicken Tostadas are crispy tortillas topped with refried beans, seasoned shredded chicken, fresh veggies, and your favorite toppings for a flavorful and satisfying Mexican-inspired dish.


Ingredients

  • 4 tostada shells
  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sour cream
  • 1/4 cup salsa or hot sauce (optional)
  • 1 lime, cut into wedges

Instructions

  1. In a skillet, heat olive oil over medium heat. Add shredded chicken, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Stir to coat and heat through for about 5 minutes.
  2. Warm the refried beans in a small saucepan or microwave until heated through.
  3. Lay out the tostada shells on a flat surface.
  4. Spread a layer of refried beans on each shell.
  5. Top with seasoned chicken, followed by lettuce, tomatoes, red onion, and shredded cheese.
  6. Drizzle with sour cream and salsa if using. Garnish with fresh cilantro and lime wedges.
  7. Serve immediately while the tostadas are still crisp.

  • You can use store-bought rotisserie chicken for convenience.
