Description

Corn Salsa is a vibrant and refreshing side or topping made with sweet corn, peppers, onion, lime juice, and fresh herbs—all tossed together in one bowl.


Ingredients

  • 2 cups corn kernels (fresh, frozen, or canned and drained)
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely chopped red onion
  • 1 small jalapeño, seeded and finely diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste


Instructions

  1. If using fresh corn, cook and cool it first. If using frozen, thaw; if canned, drain well.
  2. In a large mixing bowl, combine corn, red bell pepper, red onion, jalapeño, and cilantro.
  3. Add lime juice, olive oil, salt, and black pepper.
  4. Toss everything together until well mixed.
  5. Chill in the refrigerator for at least 15 minutes before serving to let flavors meld.

Notes

  • Use grilled corn for a smoky flavor twist.
  • Great as a dip with chips or as a topping for tacos, salads, or grilled meats.
  • Adjust jalapeño to taste for spice level.
