Cranberry Orange Bread is a moist, sweet quick bread bursting with tart cranberries and bright citrus flavor from fresh orange juice and zest. Perfect for breakfast, brunch, or a holiday treat.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon orange zest
- 3/4 cup fresh orange juice
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups fresh or frozen cranberries, halved
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and orange zest.
- In another bowl, whisk together orange juice, oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the cranberries gently.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Frozen cranberries can be used without thawing.
- For extra flavor, add a glaze made with orange juice and powdered sugar.
- This bread stores well in the fridge for up to a week.
