Description

Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, diced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz fettuccine or pasta of choice
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Cook until browned and fully cooked, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.
  3. Add chicken broth and heavy cream, stirring well. Bring to a simmer.
  4. Add uncooked pasta to the skillet. Cover and cook for about 10-12 minutes, stirring occasionally, until pasta is tender.
  5. Stir in Parmesan cheese until melted and the sauce is creamy.
  6. Return cooked chicken to the skillet and combine well. Simmer for 2-3 minutes to heat through.
  7. Garnish with chopped parsley if desired and serve hot.

Notes

  • For extra flavor, add a pinch of red pepper flakes with the garlic.
  • You can use rotisserie chicken for a quicker version.
  • Use freshly grated Parmesan for best results.
