- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, diced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 8 oz fettuccine or pasta of choice
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Cook until browned and fully cooked, about 5-7 minutes. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.
- Add chicken broth and heavy cream, stirring well. Bring to a simmer.
- Add uncooked pasta to the skillet. Cover and cook for about 10-12 minutes, stirring occasionally, until pasta is tender.
- Stir in Parmesan cheese until melted and the sauce is creamy.
- Return cooked chicken to the skillet and combine well. Simmer for 2-3 minutes to heat through.
- Garnish with chopped parsley if desired and serve hot.
Notes
- For extra flavor, add a pinch of red pepper flakes with the garlic.
- You can use rotisserie chicken for a quicker version.
- Use freshly grated Parmesan for best results.
