Ingredients

Italian Sausage:

1 pound, casing removed;

Crushed Red Pepper Flakes (optional):

1/2 teaspoon;

Onion:

1 small, diced;

Garlic:

3 cloves, minced;

Chicken Broth:

4 cups;

Russet Potatoes:

3 cups, thinly sliced;

Salt:

1 teaspoon;

Black Pepper:

1/2 teaspoon;

Heavy Cream:

1 cup;

Kale:

3 cups, chopped, stems removed;

Bacon:

4 slices, cooked and crumbled;

Grated Parmesan Cheese:

for serving


Instructions

  1. Cook Italian Sausage: In a large pot or Dutch oven over medium heat, cook Italian sausage until browned, breaking it up with a spoon.
  2. Add Ingredients: Add red pepper flakes, diced onion, and garlic. Sauté for 3-4 minutes until onion is soft.
  3. Simmer: Stir in chicken broth, sliced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Add Cream and Kale: Lower heat and stir in heavy cream and kale. Simmer for another 5 minutes until kale is wilted and soup is creamy.
  5. Adjust Seasoning and Serve: Taste and adjust seasoning as needed. Serve hot, topped with crumbled bacon and Parmesan cheese.

Notes

  • For a lighter version, use half-and-half or coconut milk.
  • You can substitute spinach for kale if preferred.
