Crispy Cheesy Refried Bean Tacos are a quick and satisfying vegetarian meal featuring golden, pan-fried tortillas filled with creamy refried beans and melted cheese. Perfect for weeknights or easy entertaining.
Ingredients
- 8 small corn tortillas
- 1 1/2 cups refried beans (canned or homemade)
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 2 tbsp vegetable oil (for frying)
- 1/2 tsp chili powder
- 1/4 tsp cumin
- Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa, hot sauce, chopped cilantro
Instructions
- In a small bowl, mix refried beans with chili powder and cumin for extra flavor.
- Heat a skillet over medium heat and add a small amount of oil.
- Spread 2–3 tablespoons of the seasoned refried beans on half of each tortilla, sprinkle with cheese, and fold in half.
- Place folded tacos in the skillet, cooking in batches if needed. Cook for 2–3 minutes on each side or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with desired toppings such as sour cream, salsa, or lettuce.
