Description

Crispy Cheesy Refried Bean Tacos are a quick and satisfying vegetarian meal featuring golden, pan-fried tortillas filled with creamy refried beans and melted cheese. Perfect for weeknights or easy entertaining.


Ingredients

  • 8 small corn tortillas
  • 1 1/2 cups refried beans (canned or homemade)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 2 tbsp vegetable oil (for frying)
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa, hot sauce, chopped cilantro


Instructions

  1. In a small bowl, mix refried beans with chili powder and cumin for extra flavor.
  2. Heat a skillet over medium heat and add a small amount of oil.
  3. Spread 2–3 tablespoons of the seasoned refried beans on half of each tortilla, sprinkle with cheese, and fold in half.
  4. Place folded tacos in the skillet, cooking in batches if needed. Cook for 2–3 minutes on each side or until golden brown and crispy.
  5. Transfer to a paper towel-lined plate to drain excess oil.
  6. Serve hot with desired toppings such as sour cream, salsa, or lettuce.
