Description
Cucumber sandwiches are a light and refreshing finger food made with thinly sliced cucumbers, creamy spread, and soft bread—perfect for tea parties, brunches, or summer gatherings.
Ingredients
- 1 English cucumber, thinly sliced
- 1/2 teaspoon salt
- 8 slices white or whole wheat sandwich bread, crusts removed
- 4 ounces cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon black pepper
Instructions
- Place sliced cucumbers in a colander and sprinkle with salt. Let sit for 10–15 minutes to draw out moisture, then pat dry with paper towels.
- In a small bowl, mix the cream cheese, mayonnaise, dill, garlic powder (if using), and black pepper until smooth and well combined.
- Spread a thin layer of the cream cheese mixture onto each slice of bread.
- Layer cucumber slices over half of the bread slices, then top with the remaining slices to form sandwiches.
- Gently press together and slice each sandwich into halves or quarters.
- Serve immediately or cover and refrigerate until ready to serve.
Notes
- Use very thin cucumber slices for best texture and presentation.
- Sandwiches can be made a few hours ahead; store tightly wrapped to prevent drying.
- Try using flavored cream cheese or adding chives for variety.
