Description

Cucumber sandwiches are a light and refreshing finger food made with thinly sliced cucumbers, creamy spread, and soft bread—perfect for tea parties, brunches, or summer gatherings.


Ingredients

  • 1 English cucumber, thinly sliced
  • 1/2 teaspoon salt
  • 8 slices white or whole wheat sandwich bread, crusts removed
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped fresh dill
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon black pepper


Instructions

  1. Place sliced cucumbers in a colander and sprinkle with salt. Let sit for 10–15 minutes to draw out moisture, then pat dry with paper towels.
  2. In a small bowl, mix the cream cheese, mayonnaise, dill, garlic powder (if using), and black pepper until smooth and well combined.
  3. Spread a thin layer of the cream cheese mixture onto each slice of bread.
  4. Layer cucumber slices over half of the bread slices, then top with the remaining slices to form sandwiches.
  5. Gently press together and slice each sandwich into halves or quarters.
  6. Serve immediately or cover and refrigerate until ready to serve.

Notes

  • Use very thin cucumber slices for best texture and presentation.
  • Sandwiches can be made a few hours ahead; store tightly wrapped to prevent drying.
  • Try using flavored cream cheese or adding chives for variety.
