Description

Curried Sausages is a comforting, old-fashioned dish featuring browned sausages simmered in a savory curry-spiced gravy with onions, carrots, and peas — perfect served over mashed potatoes or rice.


Ingredients

  • 1 tbsp oil
  • 1 lb (450g) thick sausages (beef, pork, or chicken)
  • 1 large onion, sliced
  • 2 carrots, sliced
  • 2 tsp curry powder
  • 1 tbsp all-purpose flour
  • 2 cups beef or chicken broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat oil in a large skillet or saucepan over medium heat. Add sausages and cook until browned on all sides. Remove and set aside.
  2. In the same pan, add sliced onions and carrots. Sauté for 4–5 minutes until softened.
  3. Stir in curry powder and flour, cooking for 1 minute until fragrant and flour is absorbed.
  4. Gradually add broth, stirring constantly to prevent lumps. Add tomato paste and Worcestershire sauce.
  5. Return sausages to the pan, reduce heat, cover, and simmer for 15–20 minutes, until sausages are cooked through and sauce thickens.
  6. Stir in peas and cook for another 2–3 minutes. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and serve hot over mashed potatoes, rice, or noodles.

Notes

  • Use skinless sausages for easier slicing and eating.
  • Adjust curry powder to taste depending on spice preference.
  • This dish reheats well and is great for leftovers.
