- 1 tbsp oil
- 1 lb (450g) thick sausages (beef, pork, or chicken)
- 1 large onion, sliced
- 2 carrots, sliced
- 2 tsp curry powder
- 1 tbsp all-purpose flour
- 2 cups beef or chicken broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 cup frozen peas
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat oil in a large skillet or saucepan over medium heat. Add sausages and cook until browned on all sides. Remove and set aside.
- In the same pan, add sliced onions and carrots. Sauté for 4–5 minutes until softened.
- Stir in curry powder and flour, cooking for 1 minute until fragrant and flour is absorbed.
- Gradually add broth, stirring constantly to prevent lumps. Add tomato paste and Worcestershire sauce.
- Return sausages to the pan, reduce heat, cover, and simmer for 15–20 minutes, until sausages are cooked through and sauce thickens.
- Stir in peas and cook for another 2–3 minutes. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot over mashed potatoes, rice, or noodles.
Notes
- Use skinless sausages for easier slicing and eating.
- Adjust curry powder to taste depending on spice preference.
- This dish reheats well and is great for leftovers.
