- 2 chicken breasts, cut into bite-sized pieces
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 oz pasta (penne or your choice)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/4 cup pasta water (reserved)
Instructions
- Cook pasta according to package instructions. Reserve 1/4 cup of the pasta water, then drain and set aside.
- In a large skillet over medium heat, add olive oil and 1 tablespoon butter.
- Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through, about 5-7 minutes.
- Add the minced garlic and remaining tablespoon of butter to the pan and cook for 1-2 minutes until fragrant.
- Reduce heat and add the cooked pasta to the skillet. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
- Stir in Parmesan cheese and chopped parsley.
- Serve hot, garnished with extra Parmesan if desired.

- You can use chicken thighs instead of breasts for juicier bites.
- Add red pepper flakes for a spicy kick.
