Description

A flavorful and satisfying dish featuring tender garlic butter chicken bites tossed with pasta for a quick and easy meal the whole family will enjoy.


Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 oz pasta (penne or your choice)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup pasta water (reserved)

Instructions

  1. Cook pasta according to package instructions. Reserve 1/4 cup of the pasta water, then drain and set aside.
  2. In a large skillet over medium heat, add olive oil and 1 tablespoon butter.
  3. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through, about 5-7 minutes.
  4. Add the minced garlic and remaining tablespoon of butter to the pan and cook for 1-2 minutes until fragrant.
  5. Reduce heat and add the cooked pasta to the skillet. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
  6. Stir in Parmesan cheese and chopped parsley.
  7. Serve hot, garnished with extra Parmesan if desired.

Notes

  • You can use chicken thighs instead of breasts for juicier bites.
  • Add red pepper flakes for a spicy kick.
  • Use whole wheat pasta for a healthier twist.
