- 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup uncooked long-grain white rice
- 1 1/2 cups low-sodium chicken broth
- 1 cup tzatziki sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese (optional)
- 1/2 cup chopped fresh cucumber (optional, for garnish)
- 1/4 cup chopped fresh dill or parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a 9×13-inch baking dish, combine uncooked rice, chicken broth, and tzatziki sauce. Stir well to combine.
- Add the chicken pieces, olive oil, garlic powder, oregano, salt, and pepper. Stir to evenly distribute the ingredients.
- Cover the baking dish tightly with foil and bake for 45-50 minutes, or until the rice is tender and the chicken is fully cooked.
- Remove the foil and fluff the rice with a fork. If desired, sprinkle with feta cheese and return to the oven for 5 more minutes to melt the cheese.
- Garnish with chopped cucumber and fresh dill or parsley before serving.

- Use store-bought or homemade tzatziki sauce for convenience.
- Substitute chicken thighs for extra juiciness if preferred.
- Brown rice may be used but will require longer cooking time and more liquid.
