Description

A quick and delicious mushroom chicken recipe made with tender chicken breasts, savory mushrooms, and a creamy garlic sauce. Perfect for a comforting weeknight dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add butter and sauté mushrooms until browned, about 5 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth, scraping up any browned bits from the pan. Let simmer for 2 minutes.
  6. Add heavy cream and thyme. Stir and cook for another 3-4 minutes until sauce thickens slightly.
  7. Return chicken to the skillet and spoon sauce over the top. Cook for another 2 minutes to heat through.
  8. Garnish with fresh parsley if desired and serve hot.

  • Use baby bella or cremini mushrooms for extra flavor.
  • You can substitute heavy cream with half-and-half for a lighter version.
