- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Season chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium heat. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add butter and sauté mushrooms until browned, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth, scraping up any browned bits from the pan. Let simmer for 2 minutes.
- Add heavy cream and thyme. Stir and cook for another 3-4 minutes until sauce thickens slightly.
- Return chicken to the skillet and spoon sauce over the top. Cook for another 2 minutes to heat through.
- Garnish with fresh parsley if desired and serve hot.

- Use baby bella or cremini mushrooms for extra flavor.
- You can substitute heavy cream with half-and-half for a lighter version.
- Serve with mashed potatoes, rice, or pasta for a complete meal.
