Description

These easy applesauce muffins are moist, fluffy, and infused with warm cinnamon flavor, making them a perfect breakfast or snack option.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together applesauce, oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can add 1/2 cup of chopped nuts or raisins for extra texture.
  • Substitute whole wheat flour for half of the all-purpose flour for a healthier option.
  • Muffins freeze well for up to 2 months; thaw at room temperature or microwave for 30 seconds.
