These easy applesauce muffins are moist, fluffy, and infused with warm cinnamon flavor, making them a perfect breakfast or snack option.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup unsweetened applesauce
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together applesauce, oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir just until combined.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can add 1/2 cup of chopped nuts or raisins for extra texture.
- Substitute whole wheat flour for half of the all-purpose flour for a healthier option.
- Muffins freeze well for up to 2 months; thaw at room temperature or microwave for 30 seconds.
