Description

Easy Chicken Noodle Casserole is a comforting, creamy baked dish made with tender chicken, egg noodles, vegetables, and a cheesy topping. It’s a family-friendly weeknight meal that’s simple to prepare and packed with flavor.


Ingredients

  • 3 cups cooked egg noodles
  • 2 cups cooked, shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen peas and carrots
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup crushed Ritz crackers or breadcrumbs (optional topping)
  • 2 tablespoons melted butter (for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine cream of chicken soup, sour cream, garlic powder, salt, and pepper.
  3. Stir in cooked noodles, chicken, peas and carrots, and half of the shredded cheese.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Top with remaining cheese.
  6. If using, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the top.
  7. Bake for 25–30 minutes, or until bubbly and golden on top.
  8. Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • You can substitute Greek yogurt for sour cream if desired.
  • Add cooked mushrooms or broccoli for more variety.
