Ingredients
- 1 lb chicken breast or thighs, boneless and skinless
- 1 tablespoon olive oil
- 1 packet taco seasoning (or homemade seasoning)
- 1/2 cup chicken broth
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 tablespoon fresh cilantro, chopped (optional)
Instructions
- Heat olive oil in a large pan over medium heat. Add chicken and cook until browned and fully cooked through, about 6-7 minutes per side. Remove from heat and let rest for a few minutes.
- Shred the cooked chicken using two forks.
- In the same pan, add the taco seasoning and chicken broth. Stir to combine and cook for 2-3 minutes until the chicken is fully coated in the seasoning mixture.
- Warm the tortillas in the microwave or on a dry skillet over low heat for about 30 seconds per side.
- To assemble the tacos, divide the seasoned chicken among the tortillas. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, and cilantro (if using).
- Serve immediately and enjoy your easy chicken tacos!
Notes
- Feel free to customize toppings such as guacamole, jalapeños, or avocado slices.
- If you prefer, use ground chicken instead of shredded for a different texture.
- This recipe is easily doubled for larger groups.
