Description

A simple and flavorful chuck roast recipe that’s perfect for a hearty family dinner, slow-cooked to tender perfection.


Ingredients

  • 3 lb chuck roast
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 large carrots, chopped
  • 3 potatoes, chopped


Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season the chuck roast with salt and pepper.
  3. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
  4. Sear the roast on all sides until browned, about 4 minutes per side. Remove and set aside.
  5. Add onions and garlic to the pot and sauté for 2-3 minutes.
  6. Return the roast to the pot and add beef broth, Worcestershire sauce, thyme, and rosemary.
  7. Add carrots and potatoes around the roast.
  8. Cover the pot with a lid and transfer to the preheated oven.
  9. Bake for 3 hours, or until the meat is fork-tender.
  10. Remove from oven, let rest for 10 minutes, then slice and serve with vegetables and pan juices.

Notes

  • For extra flavor, marinate the roast overnight with the seasonings.
  • You can add celery or mushrooms for more vegetable variety.
  • This recipe also works well in a slow cooker; cook on low for 8 hours.
