- 3 lb chuck roast
- 2 tbsp olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 3 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 3 large carrots, chopped
- 3 potatoes, chopped
Instructions
- Preheat oven to 325°F (163°C).
- Season the chuck roast with salt and pepper.
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
- Sear the roast on all sides until browned, about 4 minutes per side. Remove and set aside.
- Add onions and garlic to the pot and sauté for 2-3 minutes.
- Return the roast to the pot and add beef broth, Worcestershire sauce, thyme, and rosemary.
- Add carrots and potatoes around the roast.
- Cover the pot with a lid and transfer to the preheated oven.
- Bake for 3 hours, or until the meat is fork-tender.
- Remove from oven, let rest for 10 minutes, then slice and serve with vegetables and pan juices.
Notes
- For extra flavor, marinate the roast overnight with the seasonings.
- You can add celery or mushrooms for more vegetable variety.
- This recipe also works well in a slow cooker; cook on low for 8 hours.
