Description

Greek Salad Pinwheels are a flavorful and refreshing appetizer made with a blend of Mediterranean ingredients rolled in a soft tortilla. Perfect for parties, picnics, or a healthy snack.


Ingredients

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 1/4 cup plain Greek yogurt
  • 1 cup chopped cucumber
  • 1 cup chopped cherry tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup chopped red onion
  • 2 tbsp chopped fresh parsley
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. In a medium bowl, mix the softened cream cheese and Greek yogurt until smooth and creamy.
  2. Stir in cucumber, tomatoes, feta cheese, olives, red onion, parsley, oregano, salt, and pepper.
  3. Lay out the tortillas and spread an even layer of the mixture over each tortilla, leaving a small border around the edges.
  4. Roll each tortilla tightly into a log shape.
  5. Wrap the rolled tortillas in plastic wrap and refrigerate for at least 1 hour to firm up.
  6. Remove from fridge and slice each roll into 1-inch pinwheels.
  7. Arrange on a platter and serve chilled.

Notes

  • Use whole wheat or spinach tortillas for added nutrition and color.
  • Can be made a day ahead and stored in the fridge.
  • Pat cucumber and tomatoes dry to avoid soggy pinwheels.
