Greek Salad Pinwheels are a flavorful and refreshing appetizer made with a blend of Mediterranean ingredients rolled in a soft tortilla. Perfect for parties, picnics, or a healthy snack.
Ingredients
- 4 large flour tortillas
- 8 oz cream cheese, softened
- 1/4 cup plain Greek yogurt
- 1 cup chopped cucumber
- 1 cup chopped cherry tomatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced Kalamata olives
- 1/4 cup chopped red onion
- 2 tbsp chopped fresh parsley
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a medium bowl, mix the softened cream cheese and Greek yogurt until smooth and creamy.
- Stir in cucumber, tomatoes, feta cheese, olives, red onion, parsley, oregano, salt, and pepper.
- Lay out the tortillas and spread an even layer of the mixture over each tortilla, leaving a small border around the edges.
- Roll each tortilla tightly into a log shape.
- Wrap the rolled tortillas in plastic wrap and refrigerate for at least 1 hour to firm up.
- Remove from fridge and slice each roll into 1-inch pinwheels.
- Arrange on a platter and serve chilled.
Notes
- Use whole wheat or spinach tortillas for added nutrition and color.
- Can be made a day ahead and stored in the fridge.
- Pat cucumber and tomatoes dry to avoid soggy pinwheels.
