Ingredients
- 4 boneless, skinless chicken breasts
- 4 pineapple slices (fresh or canned)
- 4 sandwich buns, toasted
- 4 slices provolone or Swiss cheese (optional)
- 1/2 red onion, thinly sliced
- 1 cup lettuce or baby spinach
- 1/2 cup mayonnaise or preferred sandwich spread
- Oil for grilling
- For Marinade:
- 1/2 cup soy sauce
- 1/3 cup pineapple juice
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
Instructions
- In a bowl, mix all marinade ingredients. Place chicken breasts in a resealable bag or shallow dish and pour marinade over. Refrigerate for at least 1 hour or overnight for best flavor.
- Preheat grill to medium-high heat. Remove chicken from marinade and grill for 5–6 minutes per side or until cooked through.
- Grill pineapple slices for 1–2 minutes per side until slightly charred.
- If using cheese, place on chicken in the last minute of grilling to melt.
- Assemble sandwiches: spread mayonnaise on buns, then layer with lettuce, grilled chicken, pineapple, red onion, and top bun.
- Serve warm with extra teriyaki sauce if desired.
