Grilled Lamb Chops are tender, juicy, and full of flavor thanks to a simple marinade of garlic, herbs, and olive oil. Perfect for a quick yet elegant meal, they cook quickly and are best served with fresh sides or sauces.
Ingredients
- 8 lamb chops (rib or loin chops, about 1 inch thick)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice (optional)
Instructions
- In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, and lemon juice (if using).
- Rub the marinade over the lamb chops, ensuring all sides are coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat the grill to medium-high heat. Lightly oil the grates.
- Remove lamb from the fridge and let sit at room temperature for 10-15 minutes before grilling.
- Grill the lamb chops for 3–4 minutes per side for medium-rare, or longer for desired doneness.
- Transfer to a plate, tent with foil, and let rest for 5 minutes before serving.
Notes
- Use a meat thermometer to check for doneness: 135°F for medium-rare.
- Pair with chimichurri, mint yogurt sauce, or tzatziki for extra flavor.
- For pan-searing, use a cast iron skillet over medium-high heat with the same cooking time.
- Fresh herbs give the best flavor, but dried can be used in smaller amounts.
