Description

Grilled Lamb Chops are tender, juicy, and full of flavor thanks to a simple marinade of garlic, herbs, and olive oil. Perfect for a quick yet elegant meal, they cook quickly and are best served with fresh sides or sauces.

Ingredients

  • 8 lamb chops (rib or loin chops, about 1 inch thick)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice (optional)

Instructions

  1. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, and lemon juice (if using).
  2. Rub the marinade over the lamb chops, ensuring all sides are coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat the grill to medium-high heat. Lightly oil the grates.
  4. Remove lamb from the fridge and let sit at room temperature for 10-15 minutes before grilling.
  5. Grill the lamb chops for 3–4 minutes per side for medium-rare, or longer for desired doneness.
  6. Transfer to a plate, tent with foil, and let rest for 5 minutes before serving.

Notes

  • Use a meat thermometer to check for doneness: 135°F for medium-rare.
  • Pair with chimichurri, mint yogurt sauce, or tzatziki for extra flavor.
  • For pan-searing, use a cast iron skillet over medium-high heat with the same cooking time.
  • Fresh herbs give the best flavor, but dried can be used in smaller amounts.
