Description

A hearty and comforting Ground Beef and Rice Casserole made with simple ingredients, perfect for a family dinner.


Ingredients

  • 1 lb ground beef
  • 1 cup long grain white rice (uncooked)
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp paprika (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and cook the ground beef until browned. Drain excess fat.
  3. Add diced onion, green bell pepper, and garlic to the skillet. Cook until vegetables are softened.
  4. Stir in uncooked rice, cream of mushroom soup, cream of chicken soup, and beef broth. Mix well.
  5. Season with salt, pepper, and paprika if using.
  6. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
  7. Cover with aluminum foil and bake for 45 minutes.
  8. Remove foil, sprinkle shredded cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
  9. Let it rest for 5 minutes before serving.

Notes

  • You can substitute brown rice, but adjust baking time as needed.
  • For extra veggies, add frozen peas or corn to the mixture.
  • Use lean ground beef to reduce excess fat.
