- 1 lb ground beef
- 1 cup long grain white rice (uncooked)
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1 1/2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 tsp paprika (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil and cook the ground beef until browned. Drain excess fat.
- Add diced onion, green bell pepper, and garlic to the skillet. Cook until vegetables are softened.
- Stir in uncooked rice, cream of mushroom soup, cream of chicken soup, and beef broth. Mix well.
- Season with salt, pepper, and paprika if using.
- Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
- Cover with aluminum foil and bake for 45 minutes.
- Remove foil, sprinkle shredded cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
- Let it rest for 5 minutes before serving.
Notes
- You can substitute brown rice, but adjust baking time as needed.
- For extra veggies, add frozen peas or corn to the mixture.
- Use lean ground beef to reduce excess fat.
