Description

Hamburger Soup with Macaroni, also known as Goulash Soup, is a hearty and flavorful dish made with ground beef, tender pasta, vegetables, and a savory tomato-based broth. It’s a budget-friendly, family-favorite comfort meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup elbow macaroni
  • 1 cup frozen corn (optional)
  • 1 cup chopped carrots
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Add chopped onion and garlic. Cook for 2-3 minutes until softened.
  3. Stir in diced tomatoes, tomato sauce, beef broth, carrots, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes, or until carrots are tender.
  5. Stir in elbow macaroni and frozen corn (if using). Simmer for another 10-12 minutes, until pasta is tender.
  6. Adjust seasoning if needed and garnish with chopped parsley before serving.

Notes

  • Use ground turkey or chicken for a lighter version.
  • Add green beans, peas, or bell peppers for more veggies.
  • Leftovers thicken as they sit; add extra broth when reheating.
