Hamburger Soup with Macaroni, also known as Goulash Soup, is a hearty and flavorful dish made with ground beef, tender pasta, vegetables, and a savory tomato-based broth. It’s a budget-friendly, family-favorite comfort meal.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups beef broth
- 1 cup elbow macaroni
- 1 cup frozen corn (optional)
- 1 cup chopped carrots
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped fresh parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
- Add chopped onion and garlic. Cook for 2-3 minutes until softened.
- Stir in diced tomatoes, tomato sauce, beef broth, carrots, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes, or until carrots are tender.
- Stir in elbow macaroni and frozen corn (if using). Simmer for another 10-12 minutes, until pasta is tender.
- Adjust seasoning if needed and garnish with chopped parsley before serving.
Notes
- Use ground turkey or chicken for a lighter version.
- Add green beans, peas, or bell peppers for more veggies.
- Leftovers thicken as they sit; add extra broth when reheating.
