Description

These Healthy Apple Cinnamon Breakfast Cookies are soft, chewy, and packed with wholesome ingredients like oats, apples, and cinnamon—perfect for a nutritious grab-and-go morning snack.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup finely chopped apple (peeled and cored)
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together melted coconut oil, maple syrup or honey, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Fold in the chopped apples, and if using, the nuts and dried fruit.
  6. Scoop about 2 tablespoons of dough and shape into cookies on the baking sheet.
  7. Bake for 12–15 minutes or until the cookies are set and lightly golden.
  8. Let cool on the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store in an airtight container at room temperature for up to 3 days or in the fridge for a week.
  • Use sweet or tart apples depending on your flavor preference.
  • For a vegan version, substitute the egg with a flax egg (1 tbsp ground flax + 3 tbsp water).
