- 1 lb boneless, skinless chicken breasts
- 8 cups chicken broth
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 zucchini, diced
- 1 cup broccoli florets
- 1 cup spinach leaves
- 1 teaspoon turmeric
- 1 teaspoon ground ginger
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes (optional)
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and garlic, sauté until fragrant and translucent.
- Add carrots and celery, cook for another 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add chicken breasts, turmeric, ginger, black pepper, salt, and red pepper flakes.
- Reduce heat and simmer for about 20 minutes until chicken is fully cooked.
- Remove chicken, shred with forks, and return to the pot.
- Add zucchini, broccoli, and spinach to the soup.
- Simmer for another 10 minutes until vegetables are tender.
- Stir in lemon juice and garnish with fresh parsley before serving.
Notes
- Use organic chicken and vegetables for a cleaner version.
- Adjust spice levels by adding more or less red pepper flakes.
- This soup stores well in the refrigerator for up to 4 days.
- Can also be frozen for up to 3 months for later use.
