Description

High Protein Crispy Garlic Chicken Fried Rice is a satisfying and nutritious meal featuring crispy chicken pieces, fragrant garlic, and protein-packed fried rice. Ideal for meal prep or a quick weeknight dinner.


Ingredients

  • 2 tablespoons vegetable oil, divided
  • 2 boneless, skinless chicken breasts, diced
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 3 cups cooked and chilled jasmine rice
  • 2 eggs, lightly beaten
  • 1/2 cup frozen peas and carrots, thawed
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 2 green onions, sliced


Instructions

  1. Toss the diced chicken with cornstarch, salt, and pepper.
  2. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add chicken and cook until golden and crispy, about 5–6 minutes. Remove and set aside.
  3. In the same pan, add the remaining oil and sauté garlic until fragrant, about 30 seconds.
  4. Push garlic to the side and pour in the beaten eggs. Scramble until just set.
  5. Add the rice and stir-fry for 2–3 minutes until heated through and slightly crispy.
  6. Stir in peas and carrots, soy sauce, oyster sauce (if using), and sesame oil.
  7. Return the chicken to the pan and toss everything together until well combined.
  8. Garnish with green onions and serve hot.

Notes

  • Use day-old rice for the best texture and less stickiness.
  • Substitute chicken with tofu or tempeh for a vegetarian option.
