Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (15 oz) diced tomatoes
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned.
  2. Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the diced tomatoes, white beans, chicken broth, oregano, basil, and red pepper flakes. Bring to a boil.
  4. Reduce heat and simmer uncovered for about 20-25 minutes, allowing the flavors to meld together.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped fresh parsley before serving.
