- 1 lb Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can (15 oz) diced tomatoes
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned.
- Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Stir in the diced tomatoes, white beans, chicken broth, oregano, basil, and red pepper flakes. Bring to a boil.
- Reduce heat and simmer uncovered for about 20-25 minutes, allowing the flavors to meld together.
- Season with salt and pepper to taste.
- Garnish with chopped fresh parsley before serving.
