Description

Italian Tortellini Salad is a vibrant and hearty pasta salad made with cheese tortellini, fresh vegetables, olives, salami, and a zesty Italian dressing. Perfect for potlucks, picnics, or as a make-ahead lunch.


Ingredients

  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cubed salami (optional)
  • 1/2 cup shredded mozzarella or small mozzarella balls
  • 1/2 cup Italian dressing
  • 2 tablespoons fresh basil or parsley, chopped
  • Salt and pepper to taste


Instructions

  1. Cook the tortellini according to package instructions. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red bell pepper, olives, red onion, salami (if using), and mozzarella.
  3. Pour Italian dressing over the salad and toss until evenly coated.
  4. Season with salt and pepper to taste and sprinkle with fresh basil or parsley.
  5. Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

  • For a vegetarian version, omit the salami.
  • Use store-bought or homemade Italian dressing based on preference.
  • Can be made a day in advance—just refresh with a bit more dressing before serving.
