Italian Tortellini Salad is a vibrant and hearty pasta salad made with cheese tortellini, fresh vegetables, olives, salami, and a zesty Italian dressing. Perfect for potlucks, picnics, or as a make-ahead lunch.
Ingredients
- 1 (20 oz) package refrigerated cheese tortellini
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup red bell pepper, chopped
- 1/2 cup black olives, sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup cubed salami (optional)
- 1/2 cup shredded mozzarella or small mozzarella balls
- 1/2 cup Italian dressing
- 2 tablespoons fresh basil or parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red bell pepper, olives, red onion, salami (if using), and mozzarella.
- Pour Italian dressing over the salad and toss until evenly coated.
- Season with salt and pepper to taste and sprinkle with fresh basil or parsley.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
Notes
- For a vegetarian version, omit the salami.
- Use store-bought or homemade Italian dressing based on preference.
- Can be made a day in advance—just refresh with a bit more dressing before serving.
