Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 2 tbsp sugar
- 16 oz (2 blocks) cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 cup fresh lime juice
- 1 tbsp lime zest
- 1 cup heavy cream, whipped
- 1/2 cup chopped maraschino cherries (drained and patted dry)
- 1/3 cup chopped pistachios
- Extra cherries, pistachios, and lime zest for garnish (optional)
Instructions
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan. Chill for 15 minutes.
- In a large mixing bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, lime juice, and lime zest, and beat until well combined.
- Fold in whipped cream gently until fully incorporated.
- Fold in chopped cherries and pistachios evenly.
- Spoon the mixture onto the chilled crust and smooth the top. Refrigerate for at least 6 hours or overnight until set.
- Before serving, garnish with additional cherries, pistachios, and lime zest if desired. Slice and serve chilled.
Notes
- Drain and pat cherries dry to avoid extra moisture in the filling.
- Use roasted unsalted pistachios for best flavor balance.
- Can be made a day ahead and stored in the fridge until ready to serve.
