Description

Lime Cherry Pistachio Cheesecake is a vibrant and refreshing no-bake dessert that blends zesty lime, sweet cherries, and nutty pistachios into a rich, creamy cheesecake. It’s visually stunning and perfect for spring and summer celebrations.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tbsp sugar
  • 16 oz (2 blocks) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup fresh lime juice
  • 1 tbsp lime zest
  • 1 cup heavy cream, whipped
  • 1/2 cup chopped maraschino cherries (drained and patted dry)
  • 1/3 cup chopped pistachios
  • Extra cherries, pistachios, and lime zest for garnish (optional)


Instructions

  1. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan. Chill for 15 minutes.
  2. In a large mixing bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, lime juice, and lime zest, and beat until well combined.
  3. Fold in whipped cream gently until fully incorporated.
  4. Fold in chopped cherries and pistachios evenly.
  5. Spoon the mixture onto the chilled crust and smooth the top. Refrigerate for at least 6 hours or overnight until set.
  6. Before serving, garnish with additional cherries, pistachios, and lime zest if desired. Slice and serve chilled.

Notes

  • Drain and pat cherries dry to avoid extra moisture in the filling.
  • Use roasted unsalted pistachios for best flavor balance.
