Description

Indulge in the zesty and buttery goodness of these delightful Lime Shortbread Bars. A buttery shortbread crust topped with a tangy lime filling, these bars are the perfect balance of sweet and citrusy flavors.

Ingredients

For the crust:

  • 1 cup unsalted butter (softened)
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the filling:

  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest

Optional topping:

  • powdered sugar and extra lime zest for dusting

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Make the crust: Beat the butter and powdered sugar until creamy. Add flour and salt, mix into a dough, and press into the pan. Bake for 18–20 minutes.
  3. Prepare the filling: Whisk eggs and sugar, then add flour, lime juice, and zest. Pour over the baked crust and bake for 20–25 minutes.
  4. Cool and serve: Cool completely, refrigerate for 2 hours, slice into bars, and dust with powdered sugar and zest.

Notes

  • For a bolder citrus flavor, try using key lime or lemon juice.
  • Store bars chilled in an airtight container for up to 5 days.
