Ingredients
For the crust:
- 1 cup unsalted butter (softened)
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
For the filling:
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
Optional topping:
- powdered sugar and extra lime zest for dusting
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Make the crust: Beat the butter and powdered sugar until creamy. Add flour and salt, mix into a dough, and press into the pan. Bake for 18–20 minutes.
- Prepare the filling: Whisk eggs and sugar, then add flour, lime juice, and zest. Pour over the baked crust and bake for 20–25 minutes.
- Cool and serve: Cool completely, refrigerate for 2 hours, slice into bars, and dust with powdered sugar and zest.
