- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup (40g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/4 tsp salt
- 12 Oreo cookies, coarsely chopped
- 8 oz (225g) cream cheese, softened
- 1/4 cup (50g) granulated sugar (for cream cheese mixture)
- 1 egg yolk (for cream cheese mixture)
- 1/2 tsp vanilla extract (for cream cheese mixture)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and set aside.
- In a large bowl, mix melted butter and 1 cup sugar until well combined. Add eggs and vanilla extract and mix until smooth.
- Stir in cocoa powder, flour, and salt until just combined. Fold in chopped Oreos, reserving a few for topping.
- Spread the brownie batter into the prepared pan.
- In a separate bowl, beat the cream cheese, 1/4 cup sugar, egg yolk, and 1/2 tsp vanilla until smooth and creamy.
- Dollop the cream cheese mixture over the brownie batter and use a knife to swirl it in.
- Sprinkle reserved Oreo pieces on top.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let cool completely before slicing and serving.
Notes
- For extra fudgy brownies, slightly underbake and let them set while cooling.
- You can refrigerate the brownies for a firmer texture and easier slicing.
- Store leftovers in an airtight container in the fridge for up to 5 days.
