Ingredients
- 2 pounds potatoes (Yukon Gold or Russet), peeled and cubed
- 4 tablespoons butter
- 1/2 cup milk (more as needed)
- 1 cup shredded cheddar cheese
- Salt to taste
- Ground black pepper to taste
- Chopped chives or parsley for garnish (optional)
Instructions
- Place the peeled and cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil over medium-high heat, then reduce to a simmer. Cook until potatoes are tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add butter and mash the potatoes until smooth.
- Gradually stir in milk until the desired consistency is reached.
- Mix in the shredded cheddar cheese until fully melted and incorporated.
- Season with salt and pepper to taste.
- Garnish with chopped chives or parsley if desired. Serve warm.
