Description

Mediterranean Couscous Salad is a vibrant and refreshing dish made with fluffy couscous, crisp vegetables, tangy feta, and a zesty lemon vinaigrette. It’s perfect as a side dish or a light vegetarian main course.


Ingredients

  • 1 cup couscous
  • 1 cup boiling water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh mint (optional)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1/2 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. In a heatproof bowl, pour boiling water or broth over couscous. Cover and let sit for 5 minutes, then fluff with a fork and let cool.
  2. In a large bowl, combine cooled couscous, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and mint if using.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over salad and toss gently to combine.
  5. Chill for 15–30 minutes before serving to allow flavors to meld.

Notes

  • Can be made a day ahead and stored in the fridge.
  • Swap couscous for quinoa for a gluten-free option.
  • Add chickpeas or grilled chicken for extra protein.
