- 4 cups shredded green cabbage
- 1 cup shredded purple cabbage (optional for color)
- 1/2 cup shredded carrots
- 1/4 cup chopped fresh cilantro
- 2 green onions, thinly sliced
- 1 jalapeño, finely chopped (optional)
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine shredded green and purple cabbage, carrots, cilantro, green onions, and jalapeño (if using).
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper.
- Pour the dressing over the cabbage mixture and toss well to combine.
- Let the slaw sit for at least 10–15 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature as a side or taco topping.
Notes
- Can be made a few hours in advance—just stir before serving.
- Adjust lime and jalapeño to taste for desired brightness and heat.
