Description

A vibrant and tangy Mexican coleslaw made with crunchy cabbage, fresh vegetables, and a zesty lime dressing. Perfect as a side dish for tacos, grilled meats, or as a topping for sandwiches.


Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup thinly sliced red onion
  • 1 jalapeño, finely chopped (optional)
  • 1/4 cup fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or agave syrup
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste


Instructions

  1. In a large mixing bowl, combine green cabbage, red cabbage, carrots, cilantro, red onion, and jalapeño.
  2. In a small bowl, whisk together lime juice, apple cider vinegar, olive oil, honey, cumin, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss well to combine.
  4. Let the coleslaw sit for at least 15 minutes to allow the flavors to meld. Chill if desired before serving.

Notes

  • For a spicier version, add more jalapeño or a dash of hot sauce.
  • This slaw can be made a few hours ahead of time and stored in the refrigerator.
