A vibrant and tangy Mexican coleslaw made with crunchy cabbage, fresh vegetables, and a zesty lime dressing. Perfect as a side dish for tacos, grilled meats, or as a topping for sandwiches.
Ingredients
- 4 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 cup shredded carrots
- 1/2 cup chopped fresh cilantro
- 1/4 cup thinly sliced red onion
- 1 jalapeño, finely chopped (optional)
- 1/4 cup fresh lime juice
- 2 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey or agave syrup
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine green cabbage, red cabbage, carrots, cilantro, red onion, and jalapeño.
- In a small bowl, whisk together lime juice, apple cider vinegar, olive oil, honey, cumin, salt, and pepper.
- Pour the dressing over the cabbage mixture and toss well to combine.
- Let the coleslaw sit for at least 15 minutes to allow the flavors to meld. Chill if desired before serving.
Notes
- For a spicier version, add more jalapeño or a dash of hot sauce.
- This slaw can be made a few hours ahead of time and stored in the refrigerator.
