Ingredients
For the Pasta:
- 12 oz. pasta
- 2 cups corn kernels
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Cook the Pasta: Cook the pasta according to package instructions. Drain and set aside.
- Prepare the Corn Mixture: In a large skillet, heat olive oil over medium heat. Add corn, bell pepper, and onion. Cook until vegetables are tender, about 5-7 minutes. Add garlic, chili powder, and cumin. Stir in mayonnaise, sour cream, and lime juice. Cook for an additional 2-3 minutes.
- Combine Pasta and Corn Mixture: Add the cooked pasta to the skillet with the corn mixture. Toss to combine. Season with salt and pepper.
- Serve: Sprinkle cotija cheese and cilantro on top before serving.
Notes
- You can add grilled chicken or shrimp for extra protein.
- Adjust the spice level by adding more or less chili powder.
