Description

Nixon Chicken is a savory baked chicken dish featuring tender chicken breasts topped with a flavorful blend of sour cream, cream of chicken soup, and crispy stuffing. It’s a comforting, hearty meal ideal for family dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 package (6 oz) seasoned stuffing mix
  • 1/2 cup butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the chicken breasts in a greased 9×13-inch baking dish and season with salt and pepper.
  3. In a medium bowl, mix sour cream and cream of chicken soup until well combined.
  4. Spread the mixture evenly over the chicken breasts.
  5. In a separate bowl, mix the stuffing mix with melted butter until moistened.
  6. Sprinkle the stuffing mixture evenly over the top of the chicken and sauce.
  7. Bake uncovered for 45-50 minutes, or until chicken is fully cooked and topping is golden brown.
  8. Let rest for 5 minutes before serving.

Notes

  • Use low-sodium soup and stuffing mix to reduce salt content.
  • You can substitute Greek yogurt for sour cream for a lighter version.
  • Add a layer of steamed broccoli under the chicken for a full meal in one dish.
